In Defense of Rounded Wooden Spoons and Being Wrong in the Kitchen
There are few food folks I enjoy and respect more than Michael Ruhlman. He’s a celebrated, award-winning author; an influential and generous member of the food blogging community; and my favorite Iron Chef judge (best perplexed look in the biz).
However, in this amusing “Had Something to Say” video, produced by friends Diane and Todd from White on Rice, Mr. Ruhlman reminded me why, when it comes to cooking at least, being right isn’t as important as being happy.
Everything Michael says about the rounded wooden spoon’s design in this “Stupid Kitchen Tools” video is correct. A squared-off, flat-edged wooden spoon is the superior stirring implement, but that doesn’t change the fact that my mother used a rounded wooden spoon, which was the same one that my grandmother used, which was exactly like the one that my great grandmother used.
So for me, it looks right, feels good in my hand, and contrary to what Mr. Ruhlman believes, serves as the perfect tasting instrument – lovingly associated with all kinds of delicious memories. I’m sorry, but tasting spaghetti sauce off a square wooden spoon is like a chef using oven mitts instead of kitchen towels; it works, but it’s just not a great look.
Squares and right angles are the work of man. It’s the shape of industry, not art. Nature is round, food is round, and people are, well, you know. Cooking equipment, like life itself, is much more about what you want, than about what you need. Our brains may grab for the square wooden spoon, but the soul of a cook reaches out for the rounded one every time. What say you?

The Crispiest Apple Crisp, Ever? Ever!
Here is the apple crisp recipe that I teased yesterday, with the outrageous claim that it’s the crispiest apple crisp topping ever. Can I prove that fact? No, and that’s the beauty of such culinary hyperbole, no one can prove otherwise.
The secret ingredient, as identified by several astute observers yesterday, is Grape Nuts. This extremely crispy and crunchy breakfast cereal does some amazing things to your basic oatmeal-based fruit crisp topping mixture. I figured anything that can soak in milk for 10 minutes and still be crunchy, would work well.
Here is a link in case you are not familiar with this product, and if you can’t get any, don’t worry, you can just double the oatmeal, or add other things like chopped nuts, etc. Will it be as good? No, not even close.
By the way, in case you’re not sure, this is a dessert. It’s not a breakfast food, it’s not a healthy snack, it’s a sweet, buttery, deliciously crispy dessert. If you want healthy, slice some apples over a bowl of oatmeal, but if you want a semi-decadent after dinner treat, I hope you give this a try. Enjoy!
UPDATE: Some of you are having issues with your own "accidental apple candy," and while I joked about it in the clip, I should have been more clear about not cooking the sugar too much before adding the apples. You can add them pretty much right after the sugar goes in the pan to avoid this issue. The risk with that is too much water from the apples diluting the caramel sauce, but that's probably the lesser of two evils.

1/2 cup melted butter
1/2 cup all-purpose flour
1/2 cup oatmeal (rolled oats)
1/2 cup Grape Nuts
1/4 cup brown sugar
1/4 cup white sugar
For the filling:
5-6 apples
juice of 1/2 lemon
2 tbsp butter
1/3 cup white sugar
1/3 cup packed brown sugar
1 tbsp water
1/4 tsp cinnamon

Oscar Party Snack Ideas! And the Winner is...
I have no problem waiting a year to watch feature films via my overpriced cable provider, but the major drawback is that I never have any clue what's gong on during the Academy Awards show. I won't get any of Billy Crystal's inside jokes, and the video clip montages will only serve to confuse and annoy. So, for people like me, the highlight of any Oscar party is the food. Here are a few ideas that should garner rave reviews. Enjoy!

My friend, Linda from Salty Seattle, called this Chocolate Soufflés with Nougat Whip video, “porn without people,” and I couldn’t agree more. The term “food porn” gets thrown around way too easily these days. Sorry, that picture of your red velvet cupcakes was nice, but it wasn’t really pornographic. This, however, could make you blush. By the way, the surface temperature of a blushing face is the exact temperature at which chocolate melts. Coincidence?
This semi-sweet tour-de-force is from Debra and Rod “The Professor” Smith, from SmithBites.com. I’m relatively new to their work, but quite impressed to say the least. I’m very proud Food Wishes helped pioneer the chef-less recipe video, but this is taking that idea to a whole other place – surreal and viscerally sensual, yet still comforting and familiar. Super Bowls of Cabbage Rolls
I wanted to wish you all a fun, festive, and very delicious Super Bowl Sunday! I’ll be watching the game with the in-laws, and if you’re wondering what we’re going to be eating, you may be surprised. There will be no Buffalo wings, no nacho cheese, and no baby back ribs.
I didn’t re-shoot the recipe, but I did snap a couple cell shots that I posted to Instagram (don't worry, they're better the next day...the cabbage rolls, not the photos). Enjoy the game, and GO GIANTS!

Next Up: Nacho Cheese …But First, My Saucy Wife!
Many of you know my wife, Michele, is a big part of what happens here on the blog, and a major league food maven in her own right, but what you may not know is that she also worked with me as an associate chef instructor at the California Culinary Academy.
I’m posting a nacho cheese sauce recipe tomorrow, and it reminded me that Michele used to do a very popular “Introduction to Cheese” lecture/tasting at the school, and would always start with the same old “cheesy” joke to loosen up the class.
It was the classic, “What do you call cheese that isn’t yours? …Nacho Cheese!”
Speaking of my lovely and talented wife, the video below is something we just shot for “The Next Big Small Brand” 3rd Annual Contest for Culinary Genius. We’re hoping her amazing SFQ – The Original San Francisco-Style Barbecue Sauce qualifies as a semi-finalist, which will be announced on February 9, 2012. Keep your fingers crossed!
In the meantime, stay tuned for not only a great nacho cheese recipe video, but I’m also going to show you how to do some quick and easy pickled jalapeno rings to top it with. Enjoy!
